Built in the late 1800’s, the Black Bellows brewpub was originally a blacksmith and carriage-making shop owned by the Dey family. By the 1940’s the shop had retooled as an auto body shop. By the time Black Bellows took over the building in 2018 it had been in the Dey family for over 140 years, making it the longest-running business in Collingwood history. Forge ahead on an adventure of beer, food, and art right in the heart of Collingwood’s historic downtown.

Friends and business partners, Denzil Wadds and Tim Keenleyside wanted to turn their passion for spirits and their love of Georgian Bay into a full-time venture. It took 48 recipes and over a year to develop, but Georgian Bay Gin® was the first step on a long and exciting journey of growth. In 2016, Tim and Denny were joined by Mark Cohon, who has a passion for building great Canadian brands. Together, these three friends and business partners are on a mission to share their love of The Bay and great cocktails with the world. Shortly after its launch, Georgian Bay Vodka was named Best Vodka at the San Francisco World Spirits Competition.

Seeing the beauty of Georgian Bay and wanting to start a business that could help grow locally while using the strengths of the area, Craig Wagner was inspired to start a spirits company that would give back to the community. Shelley Johnston was consulted to take on the challenge of starting a premium distillery with Craig. Taking her passion for high quality cocktails and being given the opportunity to share with a broader base was an offer she couldn’t possibly refuse.
